SRINAGAR: Barely a few days ahead of India’s Independence Day, the nation reflects on its rich tapestry of cultural heritage, with a spotlight on its evolving culinary landscape. The recently released Godrej Food Trends Report 2024 positions Kashmir at the pinnacle of India’s gastronomic map, heralding it as the top domestic culinary destination for the coming year.

The year 2024 is set to witness a surge in culinary tourism across the country. With an increasing appetite for authentic and immersive food experiences, travellers are venturing beyond conventional sightseeing to explore the flavours that define India. The Godrej Food Trends Report 2024, curated with insights from over 190 industry luminaries—including celebrity chefs, influential bloggers, and seasoned nutritionists—serves as a compass for these gastronomic explorers.
Kashmir’s ascent to the top spot is no surprise. Endorsed by 84.2 per cent of the report’s experts, the region’s allure lies not just in its picturesque landscapes but also in its rich culinary traditions.
Central to Kashmir’s gastronomic fame is its legendary wazwan cuisine. This elaborate multi-course feast, traditionally prepared during weddings and significant celebrations, epitomises the region’s dedication to culinary artistry. Comprising dishes like gushtaba (minced mutton balls in yoghurt gravy) and tabak maaz (fried lamb ribs), wazwan is more than a meal—it’s a cultural ritual.
Travelers are increasingly drawn to the valley to experience the authenticity of wazwan. While many Indian cities offer Kashmiri dishes, there’s an unparalleled charm in savouring these delicacies amidst the valley’s serene ambience.
Beyond traditional feasts, Kashmir is pioneering farm-to-fork culinary experiences, bridging the gap between food cultivation and consumption. Leading this movement is the Sagg Eco Village, an initiative co-founded by Lubna Rafiqi and her husband, Fayaz Ahmad Dar.
Nestled amidst Kashmir’s verdant landscapes, Sagg Eco Village offers guests an immersive journey into organic farming and traditional Kashmiri cooking. “Health has become a big concern for people,” shares Rafiqi, Executive Director of Sagg. “There’s a growing desire to understand where our food comes from and how it’s cultivated.”
Visitors to Sagg engage in hands-on activities—harvesting fresh produce, understanding sustainable farming practices, and culminating their experience with meals prepared from their day’s harvest. “In cities like Srinagar, the fast-paced lifestyle has distanced people from their food sources,” Rafiqi observes. “Through our workshops, some patrons aim to rekindle their kitchen gardening practices, while others seek a deeper awareness of sustainable eating.”
The Godrej Food Trends Report doesn’t just spotlight Kashmir. Goa, with its vibrant blend of Portuguese and Indian flavours, secures the second spot, backed by 81.6 per cent of experts. The coastal state’s upcoming culinary establishments promise to elevate its gastronomic appeal further.
Kolkata, the heart of Bengal’s culinary prowess, ranks third with 78.6% expert endorsements. From its iconic rosogolla to savoury kathi rolls, the city’s diverse palette offers a feast for the senses.
Rushina Munshaw Ghildiyal, Managing Director of A Perfect Bite Consulting and Editor of the annual Godrej Food Trends Report, reflects on India’s evolving culinary landscape. “India’s culinary evolution is a testament to the incredible diversity of our nation,” she remarks. “As we celebrate our independence, we also celebrate the freedom to explore and embrace new culinary experiences, both traditional and contemporary. The destinations highlighted in this year’s report are not just places to visit but stories waiting to be tasted, reflecting the deep connections between food, culture, and community.”
As India strides forward, there’s a burgeoning appreciation for its Indigenous flavours and culinary traditions. The Godrej Food Trends Report 2024 serves as a beacon for food enthusiasts, urging them to traverse the nation’s length and breadth, savouring the myriad tastes it offers.
From the snow-capped valleys of Kashmir, echoing with the aromas of wazwan, to Goa’s sun-kissed beaches teeming with seafood delights, and Kolkata’s bustling streets resonating with sweet melodies—India’s culinary odyssey beckons.
