Harissa Boosts Mutton Demand by 30 Percent in Kashmir

   

SRINAGAR: The winter season in Kashmir is witnessing a remarkable rise in the demand for mutton, all thanks to the burgeoning popularity of Harissa.

Harissa, a traditional winter delicacy in Kashmir, has transcended home kitchens to become a sought-after ingredient in numerous local restaurants.

This culinary shift has led to a significant upswing in the demand for mutton, resulting in a noteworthy increase in supply throughout the region this winter. The ongoing season has seen a remarkable surge of over 30 per cent in the supply of mutton in Kashmir.

Khazir Mohammad Rigoo, spokesperson for the All Kashmir Mutton Dealers’ Association, revealed that the valley is currently experiencing a daily mutton supply worth Rs 12 crore on average.

“The demand for mutton has seen a notable rise this winter, and the supply is keeping pace. We are currently meeting the demand with a daily supply worth Rs 12 crore,” Rigoo said.

Highlighting the seasonal shift in mutton consumption, Rigoo noted, “Comparing the current mutton supply with the summer, the difference is evident. During summer, we would receive an average daily supply worth Rs 8 crore. The heightened mutton demand in winter is attributed to the culinary preferences of Kashmir during this season.”

Rigoo also emphasised the improved quality of mutton during the winter months, stating, “The quality of mutton has significantly improved. Consumers are seeking the finest quality, prompting suppliers to import superior mutton breeds to Kashmir.”

Renowned for its bold blend of chilli peppers, garlic, and various spices, Harissa has become a culinary sensation, transforming traditional mutton dishes into spicy delights. Restaurants across Kashmir are capitalizing on the growing demand, featuring harissa-marinated mutton prominently on their winter menus.

From the vibrant streets of Srinagar to the serene valleys of Gulmarg, sizzling Harissa has become one of the most consumed winter delicacies in restaurants. Rubina, owner of the food outlet Neimat affirmed the growing popularity of Harissa during winters.

“Harissa is witnessing robust sales this winter, prompting many restaurants and home kitchens to showcase it as a primary cuisine during this season. Despite offering other popular dishes like tandoori chicken, butter chicken, and Gajar ka halwa, we observe maximum sales of Harissa during winters,” she stated. (KNO)
